Chef Chris Denney is teaming up with George Bukhov-Weinstein and Ilya Demichev for a new restaurant in Chelsea.

Called Fantomas, the restaurant is the latest London opening from Bukhov-Weinstein and Demichev who are behind Goodman, Beast, Wild Tavern, and Belvedere as well as their most recent launch, Lita in Marylebone.

Fantomas will serve modern European food ‘with an eye on Asia, particularly Japan’ and will be rooted in the seasons. It is described as aiming to break the previous moulds of restaurants from the pair ‘with a focus on an innovative and precise culinary experience’.

The restaurant will be led by Denney’s diverse experience in various international cuisines with the chef drawing inspiration from his travels across numerous countries.

He has an impressive CV with stints working with Aaron Patterson, John Campbell, Eric Chavot, Gareth Ward, David Thompson, Enrico Crippa and Phil Howard.

He has also led his own restaurants in the capital, including 108 Garage and Fiend, both of which are now closed.

Most recently Denney had a summer residency at Golborne Road restaurant Caia cook alongside Caia co-founder Rishabh Vir and serving  a menu of dishes cooked over fire ‘with fat, salt, smoke and spice at its core’

Fantomas will be located at 300 Kings Road and is expected to open in July.
